Next time you head to a farmer’s market or grocery store, stock up on some extra apples and have fun with a few new apple coffee cake recipes. Usually this type of cake is one of the most portable, moist and reliable sorts of sweets to make. Apple cake recipes come in an enormous range of styles and with a huge range of ingredients.

Though apple cake recipes can often require a huge amount of “prep” time, this recipe is among the easiest and quickest thanks to the use of pre-packaged cake mix as the base.

There are no “hard and fast” rules for the types of apples that work best in many of the popular apple cake recipes, but it does pay off to note how sweet the remainder of the recipe might be and then pick an apple (or mix of apples) that will balance the recipe out.

Simple Apple Coffee Cake

Serves 12

2 teaspoons ground cinnamon

½ cup white sugar

½ cup chopped walnuts

1 package yellow cake mix– the brand and type doesn’t matter

1 package instant vanilla pudding mix

1 cup sour cream

½ cup vegetable oil

4 eggs

6 apples - peeled, cored and sliced (you may want to put the apples into water with a bit of lemon to prevent browning, then drain and pat dry before putting into the batter)

Preheat oven to 350˚. Grease and flour a 10” Bundt pan.

Combine the sugar, cinnamon and walnuts in a small bowl and set aside.

In a large bowl, stir together the cake mix and instant pudding mix. Add the sour cream oil, and eggs; and mix until well blended.

Place ½ of the batter into the Bundt pan, half of the sliced apples over the batter and then sprinkle with half of the cinnamon walnut mixture. Repeat by pouring remaining batter and topping with the rest of the apples and cinnamon walnut mixture.

Bake for one hour or until tester comes out clean.

Cool for 30 minutes and then remove from pan to cool completely.
