A Unique Coffee Crumb Cake Recipe



Everyone likes to have a reliable coffee crumb cake recipe that they can use for special occasions, surprise visits and even last-minute Sunday morning breakfasts. Not many of these “tried and true” recipes, however, are extremely moist and quick to make. This is a truly unique crumb cake recipe because it is full of the flavors of the old-fashioned “made from scratch” types, but it uses a secret weapon – cake mix!

A Sneaky and Unique Coffee Crumb Cake Recipe

Serves 12

1 box of yellow cake mix – the brand name and type doesn’t matter

5 Tbsp. butter, softened to room temperature

1 cup sour cream

4 large eggs

1 cup water

Crumb cake topping:

1 cup sugar

2 ¼ cups all-purpose flour

1 tsp. cinnamon

1 cup very soft butter (soften for 2 hours at room temperature)

Preheat oven to 350˚. Grease a 9x13 pan and set aside.

In a large bowl combine cake mix, butter, sour cream, eggs, and water, beating with an electric mixer until smooth.

Pour the batter into the prepared pan and bake for 15 minutes.

Make the crumb topping while the cake is baking - combine sugar, flour and cinnamon in a large bowl. Cut in the softened butter until mixture is very crumbly.

Remove the cake from the oven and carefully sprinkle the crumb topping over the entire surface. Return the cake to the oven and allow it to bake for another 20-25 minutes or until a tester inserted into the center comes out clean.

Remove from oven and allow to cool completely before slicing and serving. This recipe freezes beautifully as well.
