Every spring, millions of people head to farm stands and local markets to buy fresh local strawberries for eating, canning, freezing and even using in a quick and easy strawberry cake recipe. Though the fruits are somewhat fragile and easily bruised, they can be put to good use in many different baked goods should they not be “picture perfect”.

A good strawberry cake recipe will not smother the wonderfully fragrant sweetness of the fruit and will allow it to really shine through. The following strawberry cake recipe is super-simple, comes together fast, and places an emphasis on the taste of the berries.

A Quick Strawberry Coffee Cake Recipe

Serves 8 to 10

1½ cups flour

½ cup sugar

2 tsp. baking powder

½ tsp. salt

¼ cup melted butter

¼ cup milk

1 egg

¾ cup sliced strawberries

Preheat the oven to 350˚. Grease a 9” spring form pan and set aside.

First make the topping: Combine the flour, butter, salt and sugar in the bowl of a mixer. Using the paddle blade, blend the ingredients until the butter has been worked evenly throughout the mixture. This will turn into a very sweet, glaze-like coating on top of the cake so the crumb texture of the topping is of no concern in this recipe.

Next, make the cake: In the bowl of a mixer, stir together all of the dry ingredients.

In a separate bowl, combine the wet ingredients until well blended. Pour this into the dry and blend only until combined. Remove the bowl from the mixer stand and stir in the berries, gently, by hand.

Pat the dough into the spring form pan and spread the reserved topping evenly across the surface.

Bake at 350 degrees for 25 minutes. Cool completely before slicing and serving.
