The Perfect Banana Coffee Cake Recipe

Every occasion is perfect for trying a banana coffee cake recipe! Bananas are great for creating an enormous amount of moisture in any recipe that they are used, and this recipe is no exception.

It is important to note, however, that a banana can be too ripe to be used in even the most flexible recipe. If the flesh of the banana is too pulpy, soggy or brown, it is best to toss it into the garbage or nearest compost heap. The flavor or an overly ripe banana is easily detectable and can spoil the rest of the recipe. This recipe uses many ingredients that add to the moisture of the crumb and even a brilliant yellow, fresh banana will work just fine as well.

Perfect Banana Coffee Cake Recipe

Serves 12

½ cup chopped nuts

¼ cup sugar

1 tsp. cinnamon

1 cup sugar

1 stick butter

2 eggs

½ cup sour cream

1 tsp. vanilla

1 cup mashed bananas

1 tsp. baking powder

1 tsp. baking soda

2 cups flour

Preheat oven to 350˚. Grease and flour a Bundt pan and set aside.

In a small bowl combine the ½ cup of chopped nuts, ¼ cup of sugar and 1 tsp. of cinnamon. Set aside.

In a large mixing bowl, cream the sugar and butter until light and fluffy. To this mixture, add eggs, sour cream, vanilla, and bananas.

Stir in the baking powder, soda and flour and mix well, but do not over beat the batter.

Sprinkle ⅓ of the cinnamon mixture in Bundt pan; on top of this spoon ½ of the batter. Repeat layering and end with the last of the cinnamon mixture.

Bake for 40 minutes or until a tester comes out clean.
