A Fast and Simple Cinnamon Coffee Cake Recipe

A perfect way to enjoy a visit with friends and family is to use a simple cinnamon coffee cake recipe that allows you to spend time socializing instead of working in the kitchen. While many people have a “basic” or “traditional” cinnamon cake recipe that they like to use, it is nice to shake things up a bit every so often. This cinnamon cake recipe uses the ever-popular appeal of chocolate to make it totally irresistible.

This is a somewhat moist cake with a delicate crumb, so it is best to serve it on plates rather than as a snacking cake. The recipe can be varied a bit and additional flavors such as coconut or even chopped nuts can be added.

A Simple Chocolate and Cinnamon Coffee Cake Recipe

Serves 12

¼ cup sugar

½ tsp. cinnamon

6-12 oz. chocolate chips, nuts, coconuts or other flavorings

1 cup sugar

1 cup butter

2 eggs

1 tsp. vanilla

1 cup all purpose flour

1 cup cake flour

½ tsp. baking powder

1 tsp. baking soda

1 cup sour cream

Preheat oven to 350˚.Grease and flour a 13x9 inch pan and set aside.

In a small bowl combine ¼ cup sugar, cinnamon, and chocolate chips and set aside.

In a large bowl, cream 1 cup sugar with butter; beat in eggs one at a time and add vanilla.

In a separate bowl, sift together the flour, baking powder, and baking soda. Add the flour and sour cream, alternating, to the sugar-butter mixture.

Pour and smooth half of the batter in the greased pan, top this with half the chip mixture. Repeat this layering process with remaining batter and chips and then swirl a long butter knife through the batter.

Bake for 30 minutes or until a tester comes out clean.
